ReplyDeleteinject them with the maximum amount of apple juice you can before cooking and put a pan of water, beer or apple juice or combination of any or all below to keep moisture in the smoker (i assume it is a red metal one like i used for years until i got a green egg).
apple wood chips also add an extra zing to any pork products.

ReplyDeleteHoopie...you can make it depending upon the size of your Boston Butts...You probably have to run your cooker a little hotter than normal which is in the 225-250 range as chip chip says. You may need to run it closer to 300 or so....Most BBQ places don't run true low and slow anyway...In fact alot of them use gas or electric smokers....gasp.

ReplyDeleteChip-thanks for the advice. Meat has been on since 8am EDT and have kept the thermometer between 225-240 per the internet advice. I noticed that the meat was already at 155 deg after only 4hrs. I checked the temp at the grill level and it was at 265 deg when the smoker read 2225 deg. The smoker was a gift--seems leaky and unfortunately not accurate. I've dropped the smoker thermometer down to 190...hope it ain't too late.

ReplyDeletewe've outscored MSU 225 to 76 over the past 8 games and we are 7-1. I do feel like MSU has some playmakers and seasoned footballers and can make this a very good game. I say AU 43 MSU 22. I really like having that 3rd back to rotate into the backfield.

We didn't know as precisely their locations as now shown on the Official HABOTN Tailgaters Map (available for $19.95), so we just asked "is the zookeeper here?" and "is there a cincytiger here?" I usually don't do people (that's MrsTHT's specialty), but i must confess I enjoyed meeting Hotties in person.

ReplyDeleteSpurrier doesn't have the same intensity he use to have. The fans here in South Carolina are pumped, but if Spurrier doesn't get the gamecocks going soon, he won't be around much longer.
ReplyDeleteHey Monica - Just made it home from Brewton. Dave's was a great place for lunch; thanks for the tip. Amazingly, I walked in and there was one of my first cousins who I hadn't seen in about 4 years. I didn't even know that he had moved to Brewton.
