All we have are the embers

Thanks to the 312 people who participated in our Tuesday night campfire.

We opened at 8:40. We closed at 11:17.

Topics included Jonna Chizik, David Oku, Dontae Aycock's highlights, drunk texting, Gene Chizik's chin and the dismissals at WNSP radio in Mobile.

Big ups to Tuesday's chat stalwarts: jhag, Will, David Oku (prior to BANHAMMERING), Kristina, FSJ, MonD, j-z, Z4Z, Jet, wakerider, Nanner, Michael (in two tours) and newcomer PJunkie.

A great time was had by all.

What was the deal this time on WNSP?
I know they fired McCready for not singing the praises of Mike Shula and helping break the Mike Price story.
I don't know what Seth & Co. did or did not do, but they were better than the replacement programming streaming in from Bammerham.

I listened to Sportsdrive from day #1 with Neal, Taylor and Issac. It was as good as any national talk show I have ever heard on ESPN and remained that way even after Taylor left. The show somehow managed to cater to the Alabama crowd and maintain its journalistic dignity nonetheless.

Jay, you were a big reason I listened to the show because of your Wednesday updates. I was listening the day you and WNSP parted ways after Neal was fired. That was definitely one of the ultimate moments in the history of that show. The show had never been the same since that day and is now dead. McCready pretty much took all the credibility with him when he was shown the door.

WNSP is now a joke. Did I hear Finebaum on there the other day or was I just out of it? Completely unprofessional, which is a disappointment because I used to love listening to them for all of my sports coverage. And what's with those stupid hunting radio shows they do now? FAIL!

Wow, I hadn't heard that about WNSP. Earlier this month we lost Bill Shanks' afternoon show here in Macon (also 105.5 coincidentally). Bill is a decent UGA guy....I know, hard to believe.

I thought the national ESPN feed they replaced him with was bad, but Paul Finebaum?!?! Are they TRYING to run everyone out of Mobile County?

Morning Hotties - sorry to have missed the festivities last night and I'm sure the Campfire suffered somewhat due to my absence. But, I just can't stay awake 'till all hours of the night like 9:30 or so like you kids.

Something I thought about from posts yesterday and last night - if Michael was raised by wolves, I find it interesting that he made his foray into the sheep business in Idaho as we all know that sheep prefer to travel in different circles than wolves.

Perhaps that's the true reason behind his failure in this line of work - he continuously devoured his own inventory.

7:15 AM

GaTiger, maybe Michael just has an identity crisis and likes to parade around like a....wolf in sheep's clothing? Ok that was bad, but a happy hump day/ Ash Wednesday to all the hotties.

I recall my first job after college - I'd go out with the boys which more often that not turned into an all-nighter, come home for a shower & change of clothes then go to work. After work, nap for a few hours and repeat the previous night activities.

Now days, the only parts of that I can do are the shower followed by going to work. I fantasize about taking naps but that's just not in the cards.

I don't even think WNSP is the AU affiliate anymore. I could only find the basketball game on 105.1 which was fuzzy to say the least. WNSP was playing USA vs. Middle Tennessee or something instead. Maybe AU was on tape delay? At least they still play the ESPN programming. I pay attention to their ads so I know who not to do business with. It's basically a mouthpiece for the REC and Bammerham. Pat Dye is the only reason I would ever listen to that show.

1) Archibalds (by a mile)
2) Green Top
3) Brick Pit
4) Bob Gibsons
5) Bob Sykes

Haven't been to the others...
but some I would suggest are:

1) Miss Myra's in Cahaba Heights (See Bart Starr there often). Best banana pudding on earth too.
2) Lizzies (in East Gadsden)
3) Rib it Up (in Bham-on the Legion Field side of I-65)

Out of State BBQ:
1) Jenkins BBQ in Jacksonville, FL.. They serve it from behind bullet proof glass. No joke. Pretty good though
2) Melvin's -Just outside of Charleston. Very good.
3) Louie Mueller's....The Holy Grail of Texas BBQ

PF - Low Country isn't great, but I certainly don't think it's bad. It's just one of two places in my immediate area where I actually like their BBQ. The other places around here that try it are of the chain variety and I typically try to avoid those. There is one other places I've heard good things about but have never been since it's not very convenient so I won't report on it. Perhaps in one of our upcoming weekly BBQ discussions.

I am from Memphis, so my word is final on this.

Memphis is a meld of dry rub and Carolina vinegar, right? Dry rub when smoking, then served with a traditional vinegar sauce? If so, I approve. There is nothing better than a vinegar sauce, but it can hinder the smoke when cooked heavily in it. Dry rubs solve this problem. I love that Memphis/ West Memphis/North MS/NW AL bbq....and the blues that go with it.

You know what I hate about heavy tomato BBQ sauces? The sweet flavor that results is artificially created. Sweetness should result from the decay of a good quality slab of meat, not from some sauce that is added. That is why vinegar is best. It balances out the sweetness of the meat.

You are so wrong, Frankenbummer. Memphis sauce is tomato based. The vinegar stuff is the crap they have here in Huntsville. The meat here is no good either. I understand wanting it juicy, but it is so wet and unfirm that it seems like it has been soaking in water or something.

You have not had the best tomato based sauce. They serve it some places here in Huntsville, and it is no good. The Commissary, which I mentioned earlier, makes a spicy tomato based sauce, and it is my favorite.

You are right on the dry rub, though. The Rendezvous has really famous dry rub ribs, and when you see ribs "Memphis Style" at other restaurants, that is what you are getting.

A vinegar based sauce is a "carolina style" bbq sauce.

1:45 PM
Blogger Peter Frankenschmidt said...

Its more of the tomato sauce and vinegar, though, if I remember correctly (explaining the "spicy" aspect you speak of). That's what I call a Carolina Vinegar (which in itself is incorrect, as I've had three types of vinegar sauce in the Carolinas). Not a full on vinegar sauce a la Huntsville (which I kinda like, but gets wet and sloppy), but still has vinegar nontheless. It certainly isn't a tomato paste that turns out super sweet and resembles ketchup in texture.

I'm a sweet baby ray's bbq sauce fan myself. I like to grill off some poblanos and onions and pull a lime or lemon off my tree and let that simmer for a while. I'll also get the kc masterpiece basic sauce and doll that up with stuff around the house. Got some garlic sea salt i've grown very fond of lately.

1:52 PM
Blogger Unknown said...

for my 2 cents, if it is cooked correctly, you don't need no stinkin sauce.... same with steak. flavor comes from the type of wood/smoke. a small, tiny amount of sauce on the side for occasional dipping is ok. and yes, vinegar sauces- carolinas, Memphis - dry rub, TX/KC - tomato/molassas (sp?) based.

I find error in calling anything BBQ related "Carolina-style". All four types of BBq (tomato sauce, tomato paste, vinegar, and mustard) are well represented throughout different regions of the Carolinas. As are variations and hybrids of the different types. That being said, I use that term.

Frankenbummer: I know the spicy sauce you are talking about, but I am talking about kethup in texture spicy sauce. It is unique to this one restaurant. Neely's sauce is also a little spicy, but it is thinner, more like what you are talking about. Corky's is really sweet, which I still like, but it is not my favorite. It still beats vinegar in my book.

I am proud to say that in the wikipedia entry for BBQ styles, there is a list of styles varying from state to state, but Memphis is the only city to get a section all to ourselves. You guys should come to BBQ Fest in May. It is awesome.

Here's my pithy comment... ($1 to Bill O'Reilly):

Dreamland sauce starts with Kraft sauce as a base, IMO.

So, knowing that, I came across this clone recipe for Dreamland sauce. This is a pretty close clone for it...It still lacks something and I am working on that..but it is pretty close. Close enough to know it is what they use. If you need it more thin add some more vinegar.

1 qt Kraft bbq sauce (Plain old Kraft)
1/2 c French's yellow
1 c vinegar
1c water
1/2 c molasses
4 tbsp Tabasco
You might also add a TBSP of Rub or Spice Blend to taste...

There is a more prominent clone recipe out there on the internet..I've tried it and although the color is right it doesn't taste the same to me....

Dreamland Clone

And sorry to Jay for turning HABOTN into Food Network...At least I didn't link the clip going around of Paula Deen losing her pants in front of an audience....
